Growing up in Limoges, France, Fred worked and trained at a Michelin-starred restaurant and then moved on to working at London‘s La Tante Claire restaurant. He has moved swiftly in his career and has been a chef at a range of London’s top restaurants, including La Gavroche and Brasserie Roux. Currently a general manager at Galvins at Windows, Park Lane, he is also a familiar face on Channel 4’s ‘First Dates’ programme.
After being awarded the Academy of Culinary Arts scholarship, Dan completed an advanced apprenticeship. With his cooking foundations laid out, he then worked at Roux Fine Dining and then a Head Chef at the Old Brewery, Greenwich. Impressively, since 2012, he has been the Chef Director of Duck and Waffle and he designs some unique dishes, such as the Spicy Ox Cheek Doughnut. Further to this, Dan has been recognised as a top chef and has been awarded some prestigious titles and awards. This included the title of ‘Rising Star Chef’ at the 2013 Tatler Restaurants Awards. He is also founder of the ‘Chefs of Tomorrow Project.’
